450grms habas finas (broad beans)
1 sprig fresh thyme
3 bay leaves
I medium onion chopped into small dice
2-3 cloves chopped garlic
150 grams diced Serrano ham
Extra virgin olive oil
Ten black pepper corns
½ teaspoon pimenton dulce (ground red pepper or paprika)
1 glass sherry
1 cup water
½ chicken stock-cube


Gently saute the garlic, onion, pimenton dulce and peppercorns in the olive oil for two minutes and then add the chopped Serrano hamand continue cooking for a further one minute. Add the broad beans, thyme, and bay to the onion, and mix the ingredients thoroughly before adding the sherry, water andstock-cube. Cook for a further 20 minutes until the liquid has halved and the beans are tender.Check the seasoning and add a pinch of salt if necessary. Leave to stand for ten minutes; before serving with some crusty bread to mop up the delicious juices – Buenprovecho!

  • Start by placing a saucepan on a high heat. Place the potatoes in the saucepan and fill with water until they are covered. Bring to a boil before reducing the heat and allowing the potatoes to simmer gently for about 20 minutes. You will know that they are done when they are soft enough to pierce with a fork.
  • Once done, drain and place into a separate, large pot. Add the turmeric, cumin, chilli flakes/curry powder, tinned tomatoes, carrots, coconut, salt and pepper. Bring to a boil before turning down the heat and covering the pan with the lid. Let the mixture simmer for an hour.
  • Cook your rice at the same time as the vegetables.
  • Once your vegetable mix has been cooking for 45 minutes, stir in the beans and the spinach. Leave to cook for the remaining 15 minutes before removing from the stove and serving over the rice.
